Monday Summer & Autumn classes 2019

In this series we celebrate the bounty of the seasons and the flavours of the world in our summer and autumn cooking.

Summer is about getting together with family and friends to share delicious food in a relaxed and fun setting. In our summer classes we teach you exciting flavours and techniques from Spanish, French and Asian cooking to add to your summer repertoire. Dishes that you will crave to share with others!

Autumn in Canberra is glistening. The days are warm, the evenings more cool, and the produce is abundant. We finish the series with two classes that play with this beautiful end-of-summer produce in ways true to two regions in southern Europe, first, in French provincial cooking and, second, in Tuscan cooking.

This series is on Monday evenings, 6.30-8.30 pm. The classes take place at the Foodish Cooking School at the Belconnen Fresh Food Markets and are $99 each. 

Cook and eat wonderful food in these classes, sip on a glass or two of wine, and make new friends as you connect through cooking.

Vietnamese cuisine is all about vibrant flavours and freshness. It is considered to be one of the healthiest cuisines in the world with its emphasis on fresh produce and an abundance of herbs.

Learn how to combine Vietnamese ingredients and flavours to create iconic summer dishes--Vietnamese rice paper rolls with nuoc cham dressing, green papaya salad, beef noodle salad, and Saigon crepes.

Seasonality is a priority in Italian cooking, and in this class we transform beautiful summer produce into iconic Italian fare--asparagus, pecorino and lemon risotto, fresh colourful egg linguine with a gorgeous basil pesto, and a rich Tuscan tomato sauce. Bueno, especially with a spritz!

Summer and Autumn French Provincial cooking is driven by the bounty of the vegetable and herb gardens that adorn farms, backyards and window sills throughout Province.

In this class we transform ripe and sun-kissed produce into provincial classics like chicken provincal, pissaladiere, and provincial herb tarts. The flavours of the produce star in these iconic dishes!

Korean barbecue uses flavoursome marinades to tenderise the meat and hot, quick cooking to retain the moisture and flavour. Accompany these with traditional side dishes and the barbecued meats, or 'gogugui', take on new dimensions of intensity.

In this class we cook a variety of gogugui and make some classic sides. Learn how to barbecue Korean style, enjoy the flavour combinations, and discover why Korean barbecue has become so popular worldwide.
